Polnozrnat mešan kruh : Wholegrain mixed bread
























Pozdravljeni!

Zelo rada imam kruh, še posebej če je domač :). Mislim, da vonj po domačem kruhu, da tisti "domač" občutek, ki ga imamo vsi radi, ko se vračamo domov. 
Moja mama je vedno pekla mešan kruh malo bele moke in malo polnozrnate. Ker pa sem bila zaradi #candide "primorana", da si kruh pečem posebej brez bele moke, kvasa sem takoj začela eksperimentirati. Sem zelo zahtevna, kar se tiče dobre hrane. To je deloma kriva moja mama, ker sem vedno jedla dobro hrano. 
No pa začnimo. Kruh po mojem "izbranem okusu", vsekakor ga lahko prilagodite svojemu. ;) 
Moj kruh pa je tak.

Sestavine:

250 g polnozrnate ajdove moke - kruh je posebej dober če je moka sveže zmleta. 
200 g polnozrnate pirine moke.
50 g kamutove moke.
500 ml mineralne vode. 
1 čajno žličko soli
2 žlici olja, jaz ponavadi vmešam domače oljčno olje - odda posebno aromo. 
2 čajni žlički vinskega kamna
1 veliko pest različnih semen - jaz zelo rada uporabljam sončnična, lanena, chia,..

Pečico segrejte na 200 °C in jo dajte na program ventilacijske peke.

Postopek:
Vedno začnite z suhimi sestavinami. Te najprej skupaj premešajte, da bo vinski kamen učinkoval enakomerno po celotni zmesi. Potem dodajte mineralno vodo in olje.  Brez skrbi, če se vam zdi zmes preveč tekoča, ta kruh ni namenjen gnetenju, pravzaprav je že pripravljen na peko. Tako enostavno je. Pečico segrejte na 200 °C, pekač pa namastite z oljem. Kruh postavite v pečico in na 200 °C pustite 20 minut, potem znižajte temperaturo na 180 °C (da se kruh prepeče ampak ne zapeče), še naslednjih 25 min.

I really like bread, especially if it is homemade :) I think that smell of just baked bread gives us this "home love felling" we all like when we come home, I know that I do. :)
My mother always baked mixed bread with wholegrain flour and white flour. Which was great btheway :D, but I was forced to eliminate white flour becuse I had to much of yeast called candida in my body. So I started to watch what I was eating. And than I realized, all bought bakery is made out of white flour. So i started to bake bread by myself. I started to improvize, that's what I do most of time :).
I am really very picky when it comes to food. I think my mother is responsible for this, she is cooking so good, that I am not satisfied very quick. :)
So let's get started. Bread is made by my "selected" taste, but you can also adjust it by yours. :)

Ingredients:

250 g wholegrain  buckwheat flour - bread is better if we add freshly ground flour.
200 g wholegrain spelt flour.
50 g camut flour.
500 ml mineral water. 
1 tsp salt. 
2 tbsp oil, I usually give homemade olive oil, because it gives that special aromajaz ponavadi vmešam domače oljčno olje - odda posebno aromo. 
2 tsp Cream of Tartar - it's used instead of yeast.
1 big hand of different seeds - I like using flax, sunflower, chia, seeds,..

Preheat oven on 200 °C or 392 °F and turn it on the ventilation program - fan program.

How to:
Start with mixing all dry ingredients. Than add mineral water and oil. Don't you wory if you think that the mixture is to fluid, this bread is ment to be fluid because it's not meant to knead. actully is already done to bake. Than you have to grease a baking tray, and just poar this mixture in. Give bread into an oven and let it bake for 20 minutes than increase temperature to 180 °C or  372 °F and let it bake for another 25 minutes. :)
